Not many Western Australians would recognise the term 'Fritz' in this sign. It was a type of luncheon meat made of meat trimmings, flour, water and spices. Today in Western Australia we would call this polony. This sign used to hang at the local butcher’s shop in Dowerin. Johnston’s was a West Australian small goods and meat manufacturer from the 1930s until 1960, and was one of the largest meat processors in the state.
